Green Power Salad with Creamy Avocado Dressing

There are so many components that make this salad THE best green salad out there. First, it's got edamame. If we could just sprinkle salted edamame on all salads from now on, I think the world would be a happier place. And we'd all eat way more salads. Then, the dressing. It's CREAMY, which is, in itself, huge. Texture matters. Especially the creamy kind. It's also pretty and delicious. The avocado adds just the right amount of flavor. 


  • 2 heads broccoli, florets chopped
  • 2 cups cooked edamame 
  • 2 avocados, sliced
  • 1 cucumber, peeled, thinly sliced
  • 1 cup salted cashew halves
  • 4 cups fresh spinach

For the avocado dressing: 

  • 3/4 cup Greek yogurt
  • 1 avocado, mashed
  • 1/2 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon black pepper


  1. Mix it all together!
